Summer is in full swing at our house. With kids gone and camp, and a general laziness settling over us, it’s starting to settle in that Summer is FINALLY here.

Do you ever notice how you mark the passage of time with events throughout the year? Memorial Day weekend BBQ’s, baking with pumpkin in the fall, and a daily intake of hot chocolate during the wintertime?  I think my favorite of these events all year is the 4th of July. Full of patriotism, good food, and family, there are few things more enjoyable to me in the Summertime.

One year we were out of the country for the 4th of July, actually we were in Turkey (crazy huh) and therefore didn’t really celebrate. I spent the ENTIRE summer afterwards feeling like the 4th of July was coming up, and summer hadn’t really started yet. Then school began and I felt all discombobulated, like summer was over before it ever had really started.

This summer we are home til August and I’m very excited about it.  I have grand plans for dinners eaten outside, lazy days spent on boats and the prolific use of our grill.

Since I’m planning on living and cooking outside all summer, I’m always on the look out for new recipes to try.  My family (and me) gets a little bit tired of the same thing for dinner all. of. the. time.  When I saw this recipe for MIRACLE WHIP Cabbage and Pineapple Slaw burgers I thought it sounded fun and just different enough that I knew that I wanted to give it a try.

I’ve always eaten coleslaw on my BBQ sandwiches but had not tried it on a burger before, and let me tell you it’s good! This recipe combines the sweet tang of MIRACLE WHIP with the crisp bitter flavor of the cabbage. It’s a great combination of sweet and savory. To keep things from getting a little bit too sweet there’s even a dash of hot sauce thrown in.

This recipe would work great if you’re feeding a crowd… it gives you enough slaw to top lots of burgers. You can make the slaw and form the burgers in advance (just throw em in the fridge) so you have more time to chat with your guests when they arrive.

  1. Mmmmmm! I’m definitely going to try this this weekend! I had cole slaw on a burger for the first time at a restaurant last month and loved it! I always put it on my BBQ pulled pork and things like that and even love a Cosmo dog (hot dog with cole slaw), but never thought about it on a burger. I love the idea of the pineapple in this recipe too. Thanks!
