Maryann’s Chili

I love to cook, but don’t always have the time to do it properly- thing is, I’m kinda picky about my food, in that- if I’m going to eat it, it’d better be good.
That’s why I like this chili recipe- it’s DELISH but SOO EASY, except for the time I mixed up the Kidney Bean can with the Canned Cherry can, but we don’t need to talk about that today

The weather here never ceases to amaze me. This time last week, my daughters field hockey game was cancelled due to excessive heat… Then within a couple of days it started raining and we’ve had high’s in the 60′s all week! Near 100 to 60 in one week- crazy!!
With the cooler weather has come the inescapable need to bake something!! I seriously tried to resist, but that can of pumpkin in the pantry was calling my name.

We had a fantastic weekend! I love that the Kentucky Derby turns the first weekend in May into one big week long holiday here!
Friday we went to Churchill Downs to watch the running of the Kentucky Oaks (the races the day before the Derby, that attract just as big of a crowd). I love any excuse to wear a hat!
Easy Peasy Pizza
First of all, I’m so sorry to torture those of you who like me, are frozen and stuck with gray cold skies today. The photos of this pizza make me wish it were summer, as it looks like “summer on a plate to me”… but I can assure you it is just as delicous in the winter.
I mentioned last week that the focus of my blog this month will be on the word “Resourceful”. To me being resourceful means many things, but one of them is finding ways to make your everyday life easier and more enjoyable.

A Little bit about me… & The Kentucky Hot Brown
I’ve lived in Kentucky for 15 years, until last year I had never been to the Kentucky Derby or the Oaks (more on that later)…. I was beginning to get a bit perturbed… I mean what’s the fun of living in a new place if you can’t go enjoy what it has to offer. Tickets to the Derby are a bit hard to come by (that’s an understatement..) it seems to me you either “know” someone or you pay big bucks to buy them 2nd hand. I was just patient figuring “someday” we’d get a connection.
