If you’re looking for a cool summer treat that you can make yourself at home, then you may enjoy this recipe for Protein Smoothie Popsicles; they are simple to make and have only a few ingredients, including protein-packed milk in a variety of flavors from Shamrock Farms!

Where in the world did the summer go? One of my kids starts school the 2nd week of August, I swear I feel like we just got out of school for the summer (well, we kinda did, thanks to all of those snow days). This year my twins will be at different high schools. I’m not quite sure how I feel about that yet, but it was the best choice for both of them, and I guess it was bound to happen eventually.
My son’s new school provides him with lunch every day, but my daughter’s doesn’t. There is food for her to buy at school, but she’s almost a vegetarian and there are not a lot of great options for her in the cafeteria (unless she eats French fries every day).
She does eat chicken and some meat, but her favorite thing by far to eat are fruits and veggies. Ever since she was a little baby she has loved fruit, she orders it at restaurants (yes, instead of the French fries) and munches on it almost every day after school.
In anticipation of the new school year, I thought that I’d make her an after-school snack featuring some of her favorite fruits.
I saw the recipe online for these protein popsicle smoothies and thought it would be just the kind of thing that she would like. We try to keep an assortment of fresh fruit in the house, but if you don’t have any you can also make this recipe using frozen fruit.
The popsicles have only a few ingredients and are so easy to make! It will take you longer to get the ingredients out of the fridge than to actually make the popsicles.
- ½ cup Shamrock Farms Strawberry Reduced Fat mmmmilk
- 1 cup Greek vanilla yogurt
- Your choice of fresh or frozen fruit (berries are our favorite!)
Combine Shamrock Farms Strawberry Reduced Fat mmmmilk and Greek vanilla yogurt, and pour into blender.
Blend until smooth. Add desired fruit (about a handful of each) – can be a mix of fresh and frozen fruit – to your favorite popsicle molds.
Add the smoothie mixture. Freeze for 3 to 4 hours and enjoy!
We used plastic popsicle molds that I got at Walmart when I purchased the other ingredients. When making the pops, don’t blend the fresh fruit in with the Greek yogurt and milk.
Instead, slice the fruit and place in the popsicle molds before you pour in the smoothie mixture. I also used plain popsicle sticks so that I wouldn’t have to track down and wash the ones that came with the popsicle molds.
To keep the popsicle sticks in place while the smoothie mixture freezes, just use a bit of plastic wrap on the top of the mold.
After the popsicles come out of the freezer give them a minute or two to defrost, that way you will be able to pull them out of the molds easily.
