Graham Cracker Bites Recipe & Printable Food Labels

Today I’m going to share with you a Christmas recipe that’s been in my family for years, Graham Cracker Bites.  My Mom always used to make these yummy bites to take to friends and family at Christmas time.

These Graham Cracker bites are an addicting combination of Graham Cracker, Marshmallow, and Coconut and I can NEVER eat just one. My Mom always used to give them away to friends and family, now I know why!

Graham Cracker Bites

My Mom always used to make these yummy bites to take to friends and family at Christmas time. They are an addicting combination of Graham Cracker, Marshmallow and Coconut and I can NEVER eat just one.

Ingredients
  

  • 2 eggs beaten
  • 1/2 c butter
  • 1 c sugar
  • 30 squares of graham crackers crushed
  • 1/2 c coconut
  • 2 c mini marshmallows
  • optional: 1/2 c chopped walnuts

Instructions
 

  • Cook the eggs, butter and sugar in a double boiler over low heat until the sugar is dissolved and the mixture has thickened. About 5-10 min. Cool. Combine remaining ingredients in a large bowl. Mix in the egg mixture and spread on to a 9 x 13 pan. Chill. Cut into 1” squares and roll into balls, dip in powdered sugar to finish.

  1. When you say 30 squares of graham crackers…do you mean 2 individual crackers? Usually one cracker is made up of 4 individual crackers.

  2. Same question about the squares- if you’re talking about the smallest size, I’d call those rectangles. 🙂 And how do you think these would turn out without the coconut? I’m not the hugest fan…
